Kick off February with flavor: Binge-watch Max’s “Chasing Flavor,” starring celebrity chef and best-selling author Carla Hall.

She travels the globe to find the lineage of popular dishes such as pot pies and shrimp and grits that have shaped American food culture.

The six-episode series finds her in Italy where she learns the difference between ice cream and gelato; in Mexico where she discovers that a vertical flame helped cultures collide to create tacos al pastor; and in Ghana, where she tastes the roots of hot chicken.

“‘Chasing Flavor’ brings together so many of the things I am passionate about. It’s about food and family, sharing stories, history and travel. And, more importantly, giving credit to the cultures that had a hand in a particular dish,” said Hall in a news release.

In episode 4, “Barbecue,” she makes her way to Hampton Roads to chat with Norfolk native, food writer and culinary historian Debra Freeman about the birthplace of American barbecue: Virginia. Hall also renders the coals with Suffolk pitmaster Alex Bazemore at Big House Farm in Chesapeake, according to Freeman.

Stream the season of “Chasing Flavor” beginning Thursday on Max.
