Cauli-Flour Is The Paleo Invention Of Your Dreams
Once Caulipower cornered the market on cauliflower crusts and veggie-based, ready-made pizzas, the brand's execs were faced one question:What's next? But instead of choosing one new food to cauliflower-ize, they left the decision up to their fans. Today, the brand launched the first-ever vegetable-based flour, available for purchase on Amazon.

The stuff's not the same as the finely grated cauliflower rice that some people add to baked goods. It's the consistency or actual dry flour - hence the product's name, Cauli-Flour by Caulipower - and you can swap it cup-for-cup with any other flour in a recipe. That means cauli-based pancakes and waffles, brownies, biscuits, muffins, cookies, bagels, and pie crusts are now a thing. They're all listed on the front of the package, along with some reassurance for doubters: "Yep. We're serious."
There are two variations, one original and one Paleo (which launches a bit later, in April), and both are gluten-free. Both also list dried cauliflower as the first ingredient, but the original mix includes rice and quinoa flours and cane sugar, while the Paleo one has almond, tapioca, and arrowroot flours. The nutrition facts are what'll impress you most, though: The original mix has 320 calories, 8 grams of fiber, and 60 grams of carbohydrates per cup. A regular cup of all-purpose flour has 455 calories, 3 grams of fiber, and 95 grams of carbs.
Caulipower's got some Cauli-flour recipes on their site to stoke the fire of your imagination, like Paleo brownies, "breaded" chicken, and cauliflower pizza crust that won't fall apart when you pick it up. But, really, the possibilities are endless: Where there's a flour, there's a way.
