Katie Lee Biegels’ ‘Mom Is the Best’ Pasta Is About To Become Everyone’s New Favorite Meal

Looking to wow your family at dinnertime? Katie Lee Biegel has just the recipe for you. It’s an easy sundried tomato-based sauce served over pasta that’s so good, she calls this dish “Mom Is the Best” Pasta. It’s one of those recipes your family will ask for over and over again, and luckily, it’s a breeze to pull together whenever it’s being summoned.

“Inspired by Marry Me Pasta, except I want to change the name to Mom is the Best Pasta,” Biegel wrote in a caption of her recent Instagram video. “Whatever you call it, it’s delicious… creamy sundried tomato sauce with chicken, Pecorino, and basil. So so good.”

To make the sauce, you first start by browning ground chicken in a skillet with some hot oil and a sprinkle of salt and pepper. When the chicken is done cooking, remove it from the pan and cook your garlic, diced sundried tomatoes, and Italian seasoning on medium heat for less than a minute before adding tomato paste.

Deglaze your pan with chicken stock and add the chicken back into the pan, bringing the sauce to a simmer. Now it’s time to wait for the sauce to reduce. You can cook your pasta while the sauce is simmering — cook whichever pasta you have in your pantry! Biegel used Malfadine, which are long, rippled noodles.

When your sauce has reduced, add butter and cream and bring back to a simmer. Fold in your cooked noodles and a quarter cup of the pasta water to thicken. And when the sauce has coated the noodles to your liking, take the whole thing off the heat and toss in some pecorino cheese and fresh torn basil.
