I Made In-N-Out's Trending Secret Menu Item and It's Perfect for Onion Lovers

This trending burger is all over TikTok right now, and for good reason. It’s quick, nutritious and full of flavor.

Fans of In-N-Out Burger know all about the chain’s secret menu items, from grilled cheese to ordering items protein-style (which swaps the bun for lettuce), so the menu isn’t as secret anymore. And one menu gem that’s currently making the rounds on TikTok is the Flying Dutchman. After watching countless videos of the burger being made, I needed to try it ASAP. However, being miles away from the nearest In-N-Out, I took matters into my own hands and re-created this onion-loaded sensation—here’s what I thought.

For those unfamiliar, a Flying Dutchman consists of a hamburger with grilled onions in place of the bun. The burger is also topped with American cheese and a sauce made from mayo, ketchup and relish (similar to the one on this burger). While the American cheese adds that gooey indulgence that I personally need in a burger, it’s the onions that are the real star. The grilled onions provide a savory and slightly sweet element, enhancing the overall taste of the dish. For onion lovers like myself, this secret menu item is a dream come true.

While the precise recipe remains a closely guarded secret, I ventured into my kitchen to take a chance at re-creating it. For my burger mixture, I used 93%-lean ground beef seasoned with Cookies BBQ Flavor Enhancer Rub, a blend featuring salt, pepper, garlic, chili powder and red pepper. While I got the patty cooking in one pan, I sautéed white onion slices in another pan with a mix of butter and olive oil. Although white onions are what In-N-Out uses, I think red or yellow onions would be just as delicious.

Once my meat was cooked to a perfect medium-rare and the onions were golden brown, all that was left to do was neatly stack the ingredients and top with American cheese. For the sauce, I whipped up a blend of mayo, ketchup and relish (although this spicy mayo would taste good too!). Once it was stacked, I was ready to dig in. After one bite, I was immediately in love. From the seasoned lean beef to the creamy sauce, I understood why the secret item is so popular.

If you want to re-create this burger, be sure to cut your onions to the right thickness, which is key for a sturdy burger that won’t fall apart. I found that half an inch was the perfect balance for flavor and structure. Overall, I would definitely make this burger again. Try it for yourself, and this burger might just claim the title of your new favorite.
