Martha Stewart Shared One of Her Easiest ‘No-Cook’ Pasta Sauce Recipes To Beat the Heatwave

No one wants to be trapped in the kitchen over a hot stove when the summer heat is unbearable. But sometimes a simple salad or cold pizza just doesn’t cut it at dinnertime. Martha Stewart has the solution: her “no-cook” tomato sauce recipe takes about 20 minutes to pull together and doesn’t require any simmering, sauteeing, or unnecessary sweating.

The sauce is also packed with fresh, summer flavors, too — some of which you can source from your own garden if you have one.

“Want to beat the heat but still get a satisfying dinner on the table?” the caption of a recent Martha Stewart Instagram post reads. “To make this easy sauce, simply combine chopped tomatoes, olive oil, garlic, vinegar, and basil in a big bowl, and let sit until the flavors meld and the ingredients break down a bit.”

While the sauce is percolating, you cook the pasta of your choice, drain it, and then add it to the bowl with the sauce. “Toss it all together with a generous shower of grated Parmesan, which thickens and emulsifies the sauce,” the caption continues. You can then add a bit of tuna “for a jolt of brininess and protein,” or leave the tuna out to keep the sauce vegetarian-friendly.

Because this sauce is so simple and doesn’t require any cooking, you can experiment a bit with flavors. Stewart adds a sprinkle of red pepper flakes to add a bit of heat, but if you want a more mild taste, opt for freshly cracked black pepper instead.

You can even experiment with your herbs, too. Swap out the basil for rosemary for a more earthy flavor, or mix in a bit of freshly chopped mint to add a different level of brightness to the dish.

And, of course, you can use whatever pasta you have on hand. This sauce is great for longer noodles like spaghetti and angel hair, but it works just as well with bowties, macaroni, or cavatappi.
