Restaurant of the Week: Four Suns Fish & Chips in Hancock

HANCOCK, Mich. (WJMN) – Freshly caught Lake Superior Whitefish with a Quincy Mine view. It doesn’t get more Copper Country than it does at Four Suns Fish & Chips in Hancock. Patricia and Gilmore Peterson opened Peterson’s Fish Market in 1992 and has since expanded to a restaurant. The family owns and operates two commercial fishing boats, with their main catch being, you guessed it, Lake Superior Whitefish.

“We started with an eight by 16 trailer. A little food trailer that was small. We started right on the corner of the big red building there. And the first week we knew it wasn’t big enough,” said Patricia Peterson.

“My sister-in-law and I would, we’d be in there cooking and there was just no room and we’d be like, ‘hot behind you hot behind you’, because if you didn’t somebody was going to get burnt. And then [Patricia] came in and helped us and then she didn’t know our protocol. So, she was burning all of our fat on the back of our arm,” said Tammie Peterson, who is a co-owner of the market and restaurant, and Patricia’s daughter-in-law.

Four Suns eventually moved to a larger building and continued to expand over the years to accommodate their vastly growing, fish hungry customer-base.

“We do baked fish in here. Fried fish, French fries, coleslaw. we have a Singapore chili white fish. Parmesan coated whitefish. Real popular is the chowder our smoked fish chowder. That’s hugely popular. We have fish tacos, we have a whitefish tostada and its mixed whitefish with mayo and cilantro and thyme and onions and avocado and you put it over a tortilla could be corn or flour and then it has our salsa verde over it and its jalapenos, lime juice, garlic, tomatoes. So that’s hugely popular.”

The Petersons say they owe their success to the local community.

“The locals are what really keep us going. They are local around here. They’re so wonderful and they’re so good to us. You know, they’re we all our kids were raised in here and they will like bring our kids gifts. ‘I thought of your daughter. I knitted her this hat’, or I mean, our local customers are just the best people. They’re so good to us. They come in all the time. They keep us going,” said Tammie.

Four Suns Fish & Chips opens for the season in June and closes in the fall. They’re open Monday through Thursday and on Saturday’s 11 a.m. to 7 p.m., Friday’s 11 a.m. to 8 p.m., and closed on Sunday’s.
