How to make an ice cream sandwich

All you need is an assortment of ice cream in small pints, a variety of toppings, your favorite cookies or a thin, round waffle wafer called a stroopwafel, a serrated knife, and you're ready to make a cool culinary treat.

To make ice cream sandwiches:

  1. Put the toppings in a bowl with enough room to roll the assembled sandwiches.

  2. Place the cookies on a plate or parchment paper with their tops down.

  3. Use the serrated knife to cut through the ice cream packaging. Cutting parallel to the lid will give you perfect circles. If you're dipping into a larger carton of ice cream or dipping into your homemade ice cream, use an ice cream scoop to dollop it onto the cookies.

  4. Put the ice cream on the cookies and remove any of the carton from around the edge.

  5. Top with another cookie and press firmly to get the ice cream to stick to the cookies.

  6. Roll the edges in the toppings.

  7. Enjoy!

You can also add your favorite syrups before adding the top cookie. Take it up another notch and sandwich the ice cream between two different cookies.

These sandwiches can easily be made ahead of time and stored in the freezer, ready for any party, gathering or unexpected ice cream sandwich craving.
