Inspector Notes: Observed multiple food items in the reach in coolers not covered. (crab legs, corn, shrimp, panko, seasonings, lobster) Observed sanitizer concentration at 0ppm at dishwasher. Observed calamari, fish, clams, and scallops at temperatures above 41F in prep top cooler. Foods had been left in cooler overnight. Observed scoop left in shrimp overnight and in contact with shrimp via scoop handle.

Inspector Notes: Observed person in charge not performing duties; not ensuring employees are properly sanitizing food contact surfaces or equipment through routine monitoring for chemical sanitizing, not ensuring employees prevented contamination by using designated areas for drinking, not ensuring that physical facility is kept clean and plumbing system kept in good repair. Observed multiple employee drinks on prep stations, drink were bottles of water or cups without lids. Observed employee washing food container in 4-compartment sink but failed to sanitize dishware after washing. Observed old food stuck to clean dishware/utensils. Observed food contaminated by unsanitized equipment via ice machine. Observed plumbing system in disrepair as evidenced by floor drains being backed up. Observed floors with debris from backed up floor drains and floors in walk-in cooler with accumulations.
