Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.

  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.

  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.

  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Souru Teriyaki

4820 Yelm Highway SE, Lacey

March 1: 50 red points; 3 blue points.

Comments:

  • The person in charge and cooks lacked basic knowledge about the standard cooking temperature of chicken, temperature danger zones and hot and cold holding temperatures. The PIC and employees were directed to retake a food handler course.

  • Food worker cards were not available onsite. One food worker card was expired.

  • A handwashing sink was not equipped with soap. This was corrected during the inspection.

  • Raw chicken was stored above raw beef and shrimp. The PIC rearranged the food items to prevent potential cross contamination.

  • To-go salad boxes in the reach-in cooler were at 52 degrees. Cold held TCS foods must at or below 41 degrees.

  • A working, calibrated thermometer was not available during the inspection.

  • A chlorine sanitizer solution was too strong as prepared. The PIC remade the solution and properly tested it.

  • Food workers and cooks were observed drinking coffee and other beverages in the food preparation area without lids on the cups.

Food Service Establishment

March 7: 30 red points; 5 blue points.

Comments:

  • Multiple food workers did not have valid Washington state food worker cards.

  • Pizza and chicken kebabs were hot held at 99-130 degrees. Hot held TCS foods must be at or above 135 degrees.

  • No sanitizer solution was prepared at the time of inspection as required.

El Rey Burro

706 E. Yelm Ave., Yelm

March 1: 5 red points; 10 blue points.

Comments:

  • The person in charge did not demonstrate basic knowledge of various food safety topics.

  • Cooked TCS food items were not date marked.

  • Boxes of food items were stored on the floors of the walk-in cooler and freezer. Food items must be stored at least 6 inches above the ground to prevent potential contamination.

March 7: 5 red points; 2 blue points.

Comments:

  • The store was cited for deficiencies having to do with having an accurate thermometer and having physical facilities properly installed, cleaned and maintained. No inspection notes were provided.

Jersey Mike’s Subs

1309 Cooper Point Road SW, Olympia

March 5: 5 red points; 0 blue points.

Comments:

  • Sliced tomatoes in the make line nearest to the kitchen were at 41-45 degrees. Cold held TCS foods must be at or below 41 degrees. This was corrected during the inspection.

  • The person in charge demonstrated excellent food safety knowledge.
